Chicken Strips For back to school

Whether a kid or an adult most of us enjoy chicken nuggets. It is hard to beat home made Chicken nuggets.

I have been told by a few that these are kid approved. Yes they are more work then store bought or fast food, but so much healthier. 

I decided to go with chicken nuggets for todays post because it back to school time. This year may look different then other years, but let’s make the most of it! I know I’m teaching online this year and with new to me companies(Outschool & VIPKids).

How is it different for you and your kiddos?

If you want to go all out grab some cookie cutters about the same size to turn your chicken in to dinosaurs or what ever you have. Butterfly the chicken so they are thin.

Then Cut out.

Then Dip and bake.

Watch to make sure they don’t get burnt since they are thin. 

Chicken Strips Nuggets

Chicken strips are often labeled as unhealthy kid food.
But these are Baked, Gluten Free, Grain free, Dairy Free and Paleo goodness.
These are great with my Fancy Ketchup

Ingredients

“Breading”

  • 1 cup almond meal
  • 1 tbsp basil
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp garlic powder
  • 3 eggs

Meat

  • 2 chicken breasts

Instructions

  • In a bowl combined almond flour, garlic powder, and salt
  • stir and set aside
  • in a small bowl whisk you eggs
  • set aside
  • Prep your baking sheet with foil and grease it
  • Pre heat your oven to 375ºF
  • Cut your chicken into strips about 4-6 inches long and 1-1 ½ in wide
  • Dip your chicken into the egg make sure its completely covered
  • Let it drip off a little so your flour mixture doesn't become dough
  • Roll chicken through flour mixture
  • If its to hard to roll it when its in a bowl put the mixture on a plate
  • place on baking sheet and repeat till all chicken is floured
  • Bake at 375ºF for 20 min
