Hailey’s Pancakes

These are my favorite pancakes. I never liked pancakes as a kid. Maybe I intuitively knew that gluten was

bad for me then. I wasn’t diagnosed with celiac till I was 20. These are delicious to

me now. I like to make breakfast sandwiches out of them and eat them as a snack. They are a

staple in our house. Sometimes I just make a few and leave the batter in the fridge and

make them fresh when I want a few.
