Squash Infused Meatballs

I really enjoy winter squash especially baked butternut squash. Why not put them with meatballs which is my go to easy meal prep protein source. This is a big batch so feel free to cut it in half. Or you can freeze some for latter.


  • 1 cup baked butternut squash
  • 1 onion
  • 3 cloves garlic
  • 3 lb of ground meat I used 2 lb beef and 1 turkey
  • 3 eggs
  • 1 tsp salt mounding
  • 1 tsp pepper optional


  • Pre heat oven to 375 F
  • get out a large baking sheet
  • Chop onions
  • Mince garlic
  • Place onions in a skillet and cook with coconut oil or ghee till translucent
  • Stir in garlic and cook for 2 more minutes
  • In a large bowl mash up the butternut squash if you need to bake it still click here
  • It can have some chunks
  • Add in the ground meat, eggs, and salt
  • Add in onions and garlic I use a spoon at first till the cold meat cools down the onions
  • Then I use my hands to make sure its mixed thoroughly
  • Form meatballs and place on baking sheet, its ok to have them close together
